Coffee Time Muffins
2 cups (250g) AP flour
⅓ cup (75g) sugar
¼ cup (75g) dark brown sugar
2 teaspoons (10 mL) baking powder
4 teaspoons (20 mL) instant coffee
1 teaspoon (5mL) ground cinnamon
1/4 teaspoon (1.25 mL) salt
1 cup (225mL) milk
½ cup (110mL) vegetable oil
1 teaspoon (5mL) vanilla
Preheat the oven to 375ºF (190ºC)
In a large mixing bowl, combine the flour, sugars, baking powder, coffee granules, cinnamon and salt.
In another bowl, combine the egg, milk, oil and vanilla. Fold the wet mixture into the dry mixture until just moistened - do not overmix! Fill prepared muffin cups 3/4 full.
Bake for 22-24 minutes or until a skewer comes out clean.
