It is a very simple ratio, you're going to use two parts flour to one part liquid. Whether it's egg or water it does not matter, but weigh it out on a scale. One mistake people make is that they say they need a pasta machine, and you do not. You simply need a rolling pin and a little plastic scraper. It is much faster and easier to roll something out on a table than it is to cut it up in little strips and roll it through the machine. So you do not need a machine at all, just a little 99 cent scraper. One last thing about making pasta is you need to cook it properly. The rule is that the pasta water should be as salty as the sea. The other rule is the pasta likes to swim. So it should be in a big pot full of salty water, and then it will taste perfect.
