You want to buy the freshest greens you can, possibly from the farmers' market. Wash them right before you are going to use them. And then what you want to do is store them in the refrigerator so they are nice and chilled. Make a simple vinaigrette. This just has balsamic vinegar, olive oil, salt and pepper. Mix it up. And what I suggest to stop the greens from getting super wilted is what you are going to do is you are going to pour a little bit in the bottom of the bowl. And the reason I picked this bowl is because I want a wide, broad bowl. I am going to put the greens in carefully. Now, if my hands were really clean, I could use my hands to toss, I could use tongs, I could also use these. These are really handy. I found these at a cooking store. But the goal of your tossing lettuce with the vinaigrette is to very, very lightly coat each leaf of this lettuce of this salad. So by doing this without any of the other little things that I am going to add in, I am lightly getting my salad leaves coated. Then what I want to do when I am ready to put it on to a pretty platter, that is when I am going to add everything else. I am going to add some toasted pistachio nuts. I will add some dry cherries. If I added these things first, they would be at the bottom of the bowl right now and then you would not see them. And then I will add a little bit of feta, a little crumbled cheese. And then what you are going to do, is you are going to just simply take a big bunch of this lettuce and then you are going to put it right on your decorative platter. I like to use platters with salads. Instead of a big bowl where everything falls to the bottom of the bowl. If you use a decorative platter you can really see every lettuce leaf and you can see all of the things you put inside. Then you take the rest of your ingredients, these are the dried cherries, and then just sprinkle them on top. Just like that and then you have a pretty, very easy summer salad.
