So what you are looking for is a very very small surface to cut it with so you do not actually need the knife. The best way to cut goat cheese is with dental floss. You are going to take a piece of dental floss and just like you would use it between your teeth, take the dental floss and just slide it down the cheese. And you can see I have a very very smooth, straight cut. You cannot get that with a knife. Now this is great if you want to bread it and fry it or just as a part of a salad, and this is the best way to cut goat cheese.
