Today I have 3 cucumbers. This is a Persian cucumber, Kurvy cucumber and European cucumber. The most ideal cucumber is the Persian cucumber. The reason is it has a thin skin and not so much big seeds inside so it does not release too much water and that is very good for sushi. If you can not get a Persian cucumber, you can get a European cucumber. This also has a very thin skin and when you cut across, it does have quiet lots of seeds. So, what you will want to do is you just want to spoon the seeds out like this and that is good for sushi. Then, you have Kurvy cucumber. The Kurvy cucumber is useful as long as you take off the skin. So, you can just remove the skin like so before using and then, you can use it for sushi. So, do not think that you have to go and buy a Persian cucumber. If you cannot find it, you can always use Kurvy or European cucumbers. Good Luck!
