    Hervé Paul Chassin, the proprietor, has over 35 years experience in the food and beverage industry in St. Thomas. He began his career in fine restaurants in France, London and Washington D.C. Now, he has created his own restaurant to express his culinary philosophy: delicious, high-quality food, with great service, reasonable prices with a spectacular atmosphere.

    Located in the historic district of downtown Charlotte Amalie in St. Thomas, Hervé Restaurant is just steps from Main Street’s famous duty-free shopping center. Recommended by most cruise ship lines, Hervé offers a casual menu for lunch: quiche, crepes, spectacular salads, conch fritters and various sea foods, sandwiches and hot entrées. Always air-conditioned at lunchtime, all guests enjoy a 270 degree view of the harbor and historic town from the glass-enclosed dining rooms.
