    A Very Different Coconut Pineapple Rice

    Ingredients:
    1/2 cup coconut milk
    1 cup pineapple chopped
    2 tbsp ginger grated
    2 tbsp garlic grated
    3 cups brown basmati rice
    1/2 tsp soya sauce
    2 bay leaves
    4 cloves
    Water
    Some Parsley chopped
    Some spring onions chopped
    Olive oil
    Salt & pepper to taste

    Preparation:
    Heat the oil in a large casserole until moderately hot.
    Add the bay leaves and cloves and toss well.
    Add the garlic, ginger and spring onions.
    Add salt and pepper.
    Add the coconut milk and pineapple, add water, soy sauce, fresh parsley and cook for a minute.
    Add the brown rice, salt and pepper and turn the heat low and let the rice cook undisturbed for a few minutes.
