It all began with a dream… As a youngster, Roberta began to pursue her dream of developing a special kind of New Mexican cuisine which would combine the best features of all the influences found in New Mexico the Native American, the Mexican, and the Northern European as well as the Old World Spanish traditions her family had cherished for generations. She fine-tuned her talents and her recipes working alongside her grandmother in the family kitchen and later by experimenting with local flavors when providing for her own growing family. In 1976 Roberta realized her dream and opened Cervantes Restaurant in Albuquerque, featuring those healthful, rich and savory family recipes. Since 1979, Cervantes New Mexican Restaurant has ranked among the top 5 restaurants offering authentic, traditional New Mexican cuisine in the city and state where this festive food was born. In a city of more than 150 New Mexican restaurants, Cervantes New Mexican Restaurant stands out! As the very first New Mexican restaurant permitted to display the “Heart Healthy” logo on its menu, Cervantes New Mexican Restaurant has earned a place among Albuquerques best.
