Verjuice, an acidic juice made by pressing unripe grapes, has a long but mostly forgotten tradition in Europe. First used by the Romans, it was especially popular in the Middle Ages as an ingredient in sauces, and as a marinade for fish and meat. Now though, Verjuice is making a comeback on the gastronomic scene.
