Recipe: Tamarind Glazed Chicken

Ingredients:

1 whole chicken, cut into pieces (or chicken thighs/drumsticks)
1 cup fresh tamarind pulp (remove the seeds and fibers)
2 tablespoons honey
3 tablespoons soy sauce
2 tablespoons vegetable oil
2 cloves garlic, minced
1 teaspoon grated ginger
1 teaspoon chili flakes (adjust to your spice preference)
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions:

Prepare the tamarind pulp: Take fresh tamarind fruit, peel off the hard shell, and remove any fibers or seeds. Place the tamarind pulp in a bowl and add warm water. Let it soak for about 15 minutes. Then, using your hands, break apart the tamarind and extract the pulp. Strain the pulp through a sieve, discarding any solids. You should be left with pure tamarind pulp.

Marinate the chicken: In a large bowl, combine the tamarind pulp, honey, soy sauce, vegetable oil, minced garlic, grated ginger, chili flakes, salt, and pepper. Mix everything well to form a smooth marinade. Add the chicken pieces to the bowl and coat them thoroughly with the marinade. Cover the bowl and refrigerate for at least 1 hour (overnight is even better) to allow the flavors to meld.

Preheat the oven: Preheat your oven to 200°C (400°F).

Roast the chicken: Place the marinated chicken pieces on a baking tray lined with aluminum foil or parchment paper. Keep the remaining marinade for basting.
