Ingredients
Step 1
6 Chicken Quarters
2 tbsp. Vinegar
2 tbsp. Salt
2 tbsp. Garlic Powder (Optional)
3 Cups Water

Step 2
1/2 tsp. Carom Seeds (Ajwain)
1/2 tsp. Cumin seeds (Zeera)
1 1/2 tbsp. Lemon Juice
3 - 4 green Chilies (Sabaz Mirch)
Cilantro (Sabaz dhania) Half a bunch or as required
1/2 tbsp red chili powder (Lal Mirch)
1/2 tbsp Kashmiri red pepper powder (Kashmiri Mirch)
1 tbsp. Coriander powder (Pissa Sookha Dhania)
1 tbsp. Steak Seasoning
1/4 tsp. Nutmeg Powder (Jaifal Powder)
1/4 tsp. Mace Powder (Javitri Powder)
1/2 tbsp turmeric powder (Haldi Powder)
1/4 tsp. Black Salt (Kala Namak)
1/2 tbsp. Paprika Powder
2 tbsp. ginger Garlic Paste
Salt if required (As there is a lot of salt in Steak seasoning)
2 tbsp. Vegetable Oil

Method

Add vinegar, salt, and garlic powder in water.
Mix well and add chicken quarters.
Soak them for 1 - 2 hours.
Crush carom seeds and cumin seeds coarsely.
In a bowl, add all spices and paste and mix well.
Add green chili and cilantro paste.
Add ginger-garlic paste.
Add salt if required and mix well.
Add chicken quarters. Marinate for 2 - 3 hours or overnight in the refrigerator.
