Super Fluffy Marble Muffins | Easy recipe for ultimate fluffiness

One day an old colleague of mine brought these marble muffins to work and I was amazed how fluffy they were. She happily shared the recipe with me and I am glad to share it with you here. So enjoy and thank my dear Fulya for this yummy treat!

Ingredients

3 eggs
250 gr sugar |1 ½ cups | 1,5 water glasses
170 ml oil |3/4 cup | 1 glass
300-350 gr flour | 3 glasses
200 ml mineral/sparkly water |1 glass
1 pkg of vanilla sugar
1 pkg of baking powder
2 tblsp of cacao

How to make it

1. Get your sugar and add the vanilla sugar to it. Add the eggs and whisk it until it gets fluffy and turns white-ish.
2. Add the oil and continue mixing.
3. Add the flour gradually, pour some mineral water if it gets too thick. Add the rest of the mineral water. You’ll have quite a runny dough now.
4. Separate the dough into two equal parts. Mix the cacao into one of the dough until thoroughly mixed.
5. Get your muffin tray (or just a cake pan) and add a teaspoon of the white and a teaspoon of the dark dough. Make sure that the dough has enough space to expand (fill the individual trays with about ¾ dough).
6. Slightly stir the dough with a toothpick or any other thin object.
7. Bake at 160-170 C / 320-340 F for about 15-20 minutes. Test with toothpick if the dough is done.

Tips

*You can separate the dough into more parts and add some food coloring to make this more fun! (super fluffy rainbow muffins are always a sight to behold!)
* If the white dough feels too plain, add some marmalade or fresh fruits. In that case you should be careful that the fruit (like cherries) don’t drop to the bottom.
