Banana Dates Cutlet\r
This is a sweet version of cutlet made with ripe plantain , dates , coconut and nuts.\r
INGREDIENTS\r

Medium ripe plantain - 2 no.s\r
\r
\r
\r
\r
Ghee - 2 tbsp\r
\r
\r
\r
\r
Chopped nuts - 1/4 cup\r
\r
\r
\r
\r
Raisins - 2 tbsp\r
Dates - 10 no.s , chopped\r
Shredded coconut - 1 cup\r
Sugar - 4 tbsp\r
Cardamom powder -1/2 tsp\r
FOR BREAD CRUMBS\r
4 slice bread\r
FOR COATING\r
Flour - 2 tbsp , heaped\r
Sugar - 1 tsp \r
Water - 1/2 cup\r

METHOD\r
Pressure cook the plantains by adding enough water to cover the banana for 1 whistle , or you can steam the plantains.\r
Once the banana cooled , peel off the banana then smash it using fork or masher , keep it aside.\r
Heat ghee , fry the nuts , raisins ,dates ,then add in the coconut , sugar , cardamom powder , fry until the coconut turns to light golden in color , then add the mashed banana and mix it well , take the pan off the heat and let them to cool down.\r
Mean while make the bread crumbs using 4 slices of bread.\r
Mix the flour , sugar and water to get a thin batter.\r
Take a small portion of the banana dates mix ,roll in to a small balls then flatten in to a cutlet shape .\r
Dip each cutlet in flour batter , then coat it with the bread crumbs, set a side.\r
Heat oil , enough to shallow fry the cutlet , drop each cutlet in the hot oil and fry them until both sides of the cutlet becomes golden brown in color ..\r
Serve hot with tea or coffee ..
