♥ Korean Spicy Stir-fried Shrimp with Somyeon ♥\r
\r
Ingredients\r
1 teaspoon gochujang\r
1 Tablespoon mirin\r
2 Tablespoons sugar\r
1 heaping Tablespoon Korean red flakes\r
1 teaspoon sesame oil\r
5 cloves garlic, chopped\r
1/4 teaspoon salt\r
1/4 teaspoon black pepper\r
12 oz. large/jumbo size shrimp\r
1/2 small onion, 1/2 inch thick sliced\r
1 small carrot, sliced\r
1/2 small zucchini, cut into 2 inch strips\r
1/4 yellow bell pepper, cut into 2 inch strips\r
1 jalapeno, sliced\r
1 red chili, sliced\r
3 green onion, sliced\r
2 cups bean sprouts\r
6 to 7 oz. somyeon\r
\r
Directions\r
Combine first 8 ingredients in a small mixing bowl, whisk; pour into shrimp, mix well and set aside.\r
In a large pot, bring water to boil; add salt. Blanch bean sprouts first for 5 seconds; take out from broiling water, set aside. - Do not rinse with cold water, we want bean sprouts to be warm. In same boiling water, add somyeon. Follow directions of package for cooking time. - Usually a couple minutes. Drain, rinse in cold water. Drain again completely, set aside.\r
Heat a large wok over high heat; add oil and swirl to coat. Add onion and carrot, season with a small pinch of salt and stir-fry for 1 minute. Add zucchini, stir-fry for 30 sec. Add shrimp mixture and stir fry for 3 minutes. Shrimp should be 3/4 cooked through, now add bell pepper, jalapeno and red chili; stir-fry for 30 seconds, add green onion and remove from heat. \r
On a serving plate, lay cooked somyeon first, then blanched bean sprouts and stir-fried shrimp. Sprinkle with sesame oil and seeds. There you have it!\r
Enjoy!! ♥\r
