Chocolate Malt Brownies Recipe

Chocolate and Malt - the two go together like no other! It’s always great when you can combine a few of your favourite things into one recipe.

Ingredients:
1 cup (125g) all-purpose flour
½ cup (70g) malted milk drink powder
½ tsp (2 mL) coarse salt
½ tsp (2 mL) baking powder
1⅓ cup (225g) chopped chocolate
½ cup (119g) butter
2 large eggs
¾ cup (175g) sugar
1 tsp (5 mL) pure vanilla extract
120g (1 cup) chocolate covered malt balls, roughly chopped
(Maltesers, Whoppers, Whispers, Mighty Malts, Ovalteenies)

Method:
Preheat oven to 350°F (180°C).
Grease a 9” x 9” (23 x 23 cm) pan and line with a parchment paper sling.
Whisk together the flour, malted milk powder, salt and baking powder.
Combine chocolate and butter in a heatproof bowl or measuring cup.
Microwave for 30 seconds then stir.
Repeat until chocolate and butter are melted.
In another bowl, whisk together the eggs, sugar and vanilla until smooth. 
Whisk in the slightly cooled chocolate mixture.
Fold the dry ingredients into the wet ingredients.
Fold ⅔ of the chopped Maltesers into the batter.
Pour the batter into the pan and scatter on the remaining Maltesers.
Bake just until a cake tester inserted in the centre comes out with a few moist crumbs attached.
That should be 30 to 35 minutes - but don’t overbake, that can lead to a bitter flavour.
Allow brownies to cool completely in the pan.
Cut into as many or as few brownies as you wish.
