Easy Eggplant Parmesan recipe! This is one of my favorites. I like this version better than most restaurant recipes - and this recipe is easy to make!\r

Ingredient List:\r
Pan: I used a glass 11 x 7 pan. Use either glass or ceramic. Dont use metal.\r
* 1 large eggplant\r
* 2 eggs\r
* 1/2 cup flour\r
* 1 tsp salt\r
* Cooking oil (I used coconut oil)\r
* 1/2 cup grated Parmesan cheese\r
* 8 ounces sliced Mozzarella cheese\r
* about 20 ounces of marinara sauce\r
