Halal Islamic Food in China

Chinese Islamic food, also known as "huizu cai," or food of the Hui people, is a unique category under the broad umbrella of Chinese cuisine. While there are subcategories within Chinese halal cuisine, a common variation is Northern Chinese Islamic food. Whereas Southern halal food takes advantage of duck and seafood, the food from the North relies heavily on mutton, beef and lamb. The grub is heavy and that fact manifests itself in dough-heavy dishes and all the meat.

Xinjiang cuisine is found throughout much of China, as migrants from the region often open Xinjiang restaurants or food stands in other regions. Signature ingredients include roasted mutton, kebabs, roasted fish, and rice. Because of the Muslim population, the food is predominantly halaal.

The region's economy has largely revolved around agriculture and trade, with towns such as Kashgar thriving as hubs along the famous Silk Road.
