Cinnamon Streusel Cake For Two

Rich, moist, and flavourful cake for two!

Ingredients:
Topping
1½ Tbsp (22 mL) all-purpose flour
1½ Tbsp (22 mL) sugar
1½ Tbsp (22 mL) brown sugar
1 Tbsp (15 mL) butter softened
1 tsp (5 mL) cinnamon
1/3 cup (75 mL) pecan pieces

Cake
¾ cup (175 mL) all purpose flour
pinch of salt
¼ tsp (1 mL) baking powder
¼ tsp (1 mL) baking soda
¼ tsp (1 mL) cinnamon
¼ cup (60 mL) sugar
¼ cup (60 mL) brown sugar
¼ cup (60 mL) yogourt
1 egg
2 Tbsp (30 mL) butter, melted


Method:
Preheat oven to 350ºF *180ºC)
Grease and flour a 6 inch round cake pan; line bottom with parchment.
Mix together all of the ingredients for the streusel and set aside.
In another bowl mix together the flour, salt, baking powder, baking soda, and cinnamon.
In a 3rd bowl whisk together the sugars, yogourt, butter, and egg.
Mix the wet into the dry and pour into the cake pan.
Sprinkle the top of the batter with the streusel mixture, and bake for about 35 minutes.
Let the cake cool on a rack for 10-15 minutes before removing from the pan (peel off the parchment as well).
Allow to cool before serving… if you can.
