An éclair is a long pastry made with dough and filled with a cream and topped with icing.
The éclair originated during the nineteenth century in France where it was called "pain à la Duchesse" or "petite duchesse" until 1850. It is a popular member of the pie family served all over the world.


Ingredients:-
For the pastry:-
240 ml. water
2 tsp. Caster sugar
1 tsp. Salt
½ cup unsalted butter
130 gms. Refined flour, sieved
2 Eggs

For the filling:-
3 Egg yolks
50 gms. Caster sugar
2 tbsp. Corn flour
2 tbsp. Refined flour
300 ml. Milk
1 tsp. Vanilla extract

For the chocolate glaze:-
100 ml. Heavy cream
125 gms. Dark chocolate, chopped
1 tsp. Butter
1 tsp. Vanilla extract



Method:-
1) In a saucepan add water, caster sugar, salt, unsalted butter and heat it until it starts bubbling. Once it starts to bubble, take it off the heat and add refined flour to it all at once and mix well.
2) Place on the heat again and cook for around 2 minutes until all of this comes together.
3) After 5-7 minutes whisk the dough to release the steam.
4) Add 2 eggs one by one and the whisk rest of the eggs and add as required to the dough.
5) Fill the dough in the piping bag and make eclair shapes on parchment paper keeping a distance of 2 cms from each other.
6) Bake these in a preheated oven at 200°C for 10 minutes and then at 180°C for 25-30 minutes.
7) In another bowl, mix egg yolks and caster sugar well.
8) Sieve together corn flour and refined flour and mix them to this mixture.
9) Heat milk and once it comes to a boil, add it to the this mixture.
