'Extreme' Japanese winemaker is a natural

For nearly two decades Japanese former chemist Hirotake Ooka has been on a quest to make the very best and most natural French wine possible. "My philosophy is to make a wine just with the grapes, without yeast, sugar or sulphites. In the vineyard as well I like to do the most natural things possible," he added, letting the grass grow under his vines and encouraging as much biodiversity as possible.
