The beginning of the harvest. It takes a while!
These three hives are on the roof of the Eiffel Park Hotel, and this is the second year that we have harvested their honey.
Last year it had a slightly minty taste, but it all depends on the flowers available - and the weather has been quite strange this year.
We are all quite impatient to taste the 2007 honey!
