Bulgaria is blooming ahead in the sweet smelling business of producing lavender at the foot of the Balkan Mountains.
The carpet of organic lavender stretches one-hundred hectares at the Enio Bonchev Production Company. At noon, dozens of workers pick lavender blossoms in the hot weather on the purple-colored fields. At temperatures close to thirty-eight degrees centigrade, the concentration of oil in the blossoms is at its highest. Skilled workers are able to pick up to three-hundred kilograms of blossoms in a day. Bags of lavender petals are then taken to the nearby distillery where workers press them by foot before the precious oil is extracted in a steam distillation process.
