Here's where the fun begins, it's time to cook. First you want to sear the filet mignon, don't overcook it, you want it to be medium-rare. Remove the beef from the wok, and add your onions (red and green) along with the Aji Amarillo pepper slices.
Next up you want to add the sauce you just finished prepping, along with some duck stock. You can substitute beef or chicken stock here. Toss, then add all your other veggies except the cilantro, and throw in the beef. Toss it one last time, then serve atop a bed of french fries, or rice. Garnish with a bit of fresh cilantro, and dig in.
