US based Mexican restaurant owners are dealing with soaring prices of lime. For many eateries, it wouldn't be a huge deal, but those specializing in Mexican cuisine are unsure of what to do, as lime is an essential ingredient in guacamole and as toppings on drinks.

Last year, US buyers paid, on average, about $14 per box of limes. Now, the cost for the same sized container has hit nearly $100.

Some restaurant managers in San Antonio have decided to nix lime altogether and are hunting for or already using a suitable replacement. John Berry, who is the operator of Texas based restaurant, La Fonda responded to the sky high prices of lime stating ‘Real simple. We don't buy them. We substitute lemons.’

The problem is that most limes used in the United States are shipped from Mexico where some of their states are encountering a combination of flooding and cold weather wiping out the once ample supply.

Outgoing shipments have also been negatively impacted by violence from drug gangs. Making the situation even worse is that wholesalers don’t except the lime prices to go down anytime in the near future.
