Currently, however, only 20 percent of the product consumed comes from the country’s farmers.

Keeping deer rather than other livestock is also considered a good move by many because they’re just easier and cheaper to maintain.

Highly adaptable, they can adjust to myriad landscapes and environments.

When it comes to eating, they prefer lighter meals and consume significantly less fodder than cattle.

Deer also mature more quickly, and can reproduce for up to 20 years.

When it comes time to have the animals processed, standard government rules apply, including specifications on handling and labeling.

One Vermont couple says their deer farm sells 99 percent of their product within the state, including to local restaurants and private customers.

In addition to contracts she has with local restaurants she sells to both area residents and private farm patrons.
