Pan Seared Scallops and Langoustine Tails
This recipe comes to us from Scotland. 4 Portions Ingredients 6 Hand Dived Scallops from Ross-shire (Live and still in the shell) 12 Live Langoustines Method To prepare the scallops use a stiff knife to split open the shells and break through the hinge. Carefully scoop out the flesh.Trim away the skirt and muscle. This is the hard white bit connected onto the scallop (Do not use this) Reserve the orange roe to dry and use in seasoning. For the langoustine place a pan of water onto boil. Remove the head from the tail. Remove the intestine tract from the rear of the tail shell by pinching the centre piece of shell and twisting it the tract should come out. Place the tails into the pan of boiling water for 20-30 seconds then remove and place in iced water to cool. Carefully crack the shell by squeezing the tail be carefully not to crush it then peel away the remaining shell. Home made crisp bread with a typical Swedish dressing
This recipe comes to us courtesy of Björn Stebeck from the Salt & Brygga restaurant in Malmö, Sweden. The crisp bread 400 g organic wheat flour 120 g organic rye flour 50 g organic syrup 20 g yeast 2 dl water salt, fennel seeds and cumin to taste. Start by combining the yeast and the water in your mixer or in a bowl and stir until blended. Add the syrup and the rye flour and stir. Then add the wheat flour while stirring. Add salt, fennel seeds and cumin. Take the dough out of your bowl and work it with your hands for a couple of minutes. Cover with a cloth or with plastic film. Let it rise for a minimum of 1 hour. Heat the oven to 200 degrees. Roll out the dough using a rolling pin. The flatter the better! Cut any kind of shapes you like and place on a tray with baking paper. Put the tray in the oven for about 10 minutes. Done! Ps. The recipe for this local favorite comes to us from Olivier Pons, head chef at the Château d'Igé restaurant in the Burgundy region.Serves 4Ingredients:1 large Bresse chicken, weighing around 2 kg150g carrots150g onionsThymeRosemaryHalf a bay leaf350g cream¾ litres chicken stock Mushrooms150g oyster mushrooms150g chanterelles100g Butter from Etrez*Salt and Pepper Cut the chicken into four pieces.Peel the carrots and onions and cut them into fine strips.Clean the mushrooms and lightly fry them in 50g of butter. Dust them in a very thin layer of flour before seasoning with salt and pepper. Heat 150g of the butter in a frying pan that is big enough for all four fish, or heat half of the butter in a pan big enough for two. Add some olive oil so that the butter doesn’t burn.Leave the fish to fry for four minutes on each side, until they are golden. Place them on pre-warmed plates and sprinkle them with the chopped parsley. Heat the rest of the butter in the pan until brown and add the lemon juice. Remove scales and cut to size, if necessary.Dust the skin lightly with flour and fry on both sides in a pan until crisp.Peel the mini cucumbers, cut into 5 cm long pieces and roast on the grill. Try this delicious recipe from Germany. Barley Risotto with Wild Garlic 30 g Butter 60 g Shallot brunoise 160g Pearl Barley (coarse, hulled, rolled barley) 0,2l Clear, degreased broth (suitable for recipe, e.g. chicken broth) 0,02l Dry white wine 40 g Grated Parmesan cheese 20 bis 50g Whipped butter, 2 Tbsp fresh wild garlic leaves Cook butter and shallot brunoise until transparent in a pan over low heat. Wash barley well, add to mixture and briefly cook over low heat. Deglaze with white wine and boil wine to reduce, then pour on clear broth, cover and let stand at stove top's edge. As soon as the liquid has boiled off or been absorbed, test for texture. If too firm, add some broth and let stand a little longer. Fold under cold butter until melted and season with salt, pepper, nutmeg and wild garlic.
