Pan Tumaca (Tomato Bread) •baguette bread •2 tomatoes (depending on the size) •salt •2 teaspoons olive oil •pepper (optional) •1 garlic clove (optional) 1. Grate the tomatoes with a cheese grater into a bowl. You should dispose the peel. 2. Add olive oil, salt and pepper to your taste. 3. Cut the baguette in 4 pieces and cut them again transversely. 4. Toast the bread. 5. Once toasted, you can optionally spread some garlic to make it a little bit spicy. 6. Spread the tomato mix over the toasts and enjoy it. A very typical Spanish breakfast. Consists on a toast, but instead of butter or jam, we use tomatoes. Try it only with Baguettes, or any bread that comes in the shape of a bar, with the crunchy outside. And by the way, adding a little bit of the mix to any sandwich makes the sandwich incredibly delicious. Mr Breakfast would like to thank chelopo for this recipe.
Ingredients 150g/5oz halloumi cheese ½ a lemon, juiced 20ml/1oz olive oil cracked black pepper to taste Method 1. Slice the halloumi into ½cm/¼in thick slices. 2. Char-grill or pan-fry the cheese in the olive oil. 3. Drizzle over the lemon juice and cracked black pepper and serve.
Ingredients 1 pound ground pork 1 large onion, finely chopped 1/2 cup finely chopped fresh parsley 1 pinch salt and pepper to taste 1 tablespoon vinegar 1/2 pound caul fat 10 skewers Directions 1.In a medium bowl, mix together the ground pork, onion, parsley, salt and pepper. 2.Fill a bowl with warm water, and add the vinegar. Dip the caul fat into the water, and keep submerged for 1 minute to wash. Rinse in cold water. Carefully open up the caul fat on a clean work surface, and cut into 4 inch (10 cm) squares. 3.Place a small compressed handful of the sausage near the edge of one square. Fold the sides over, and roll up firmly. Repeat with remaining meat and fat until you have about 10 sausages. 4.Prepare a charcoal grill for high heat. Place sausages onto skewers. 5.Grill the sausages for 20 minutes, turning frequently until the outside is crispy and dark, and the inside is no longer pink.
